Kellis Cookies chocolate

I never thought I’d be so happy to have rain and cold weather, but I am! These last few days have been wet ones – very wet! As much as I do not like to deal with it, California needs its. It makes be very happy to know our water supply is getting replenished.

With the rain comes cold weather and a lot of indoor time. One of my favorite things to make on cold rainy days is hot chocolate – Abuelita (Mexican brand) hot chocolate. I remember my mother making the same Abuelita, which means grandmother in Spanish. As a kid, we were served hot chocolate with a bolillo, a roll. Now as an adult, I get to have hot chocolate with my favorite treat – cookies!!!

Wait, talking about cookies I have to tell you about my favorite cookies – Kelli’s Cookies! Kelli’s Cookies is a local, Roseville CA (Northern California),  small business that has been around for 16 years and is woman owned. I discovered this company a few years ago when I was looking for a nice treat for a few of my co-workers. If you live in the Sacramento area, you must visit Kelli’s Cookies located on Douglas Blvd or the Fountains in Roseville, CA. However, if you’re not a local no worries. Kelli’s delivers nationwide via Amazon!

By the way, did you know that today is National Cookie Day! What? Yeah, I didn’t know until the other day and I decided to tell you about my favorite cookies. Kelli’s Cookies has so many varieties it is difficult to pick just one (can you tell? I bought three!) Chocolate Chunk, Snickerdoodle, Oatmeal Raisin, Toffee Fudge, White Chocolate Mocha, Lemon Coconut, Pumpkin Pecan White Chocolate – tried them all and I’ve never been disappointed. They’re so soft and chewy, Oh my gosh, so good!

So, pick up your favorite cookies, make a nice cup of hot chocolate and enjoy NATIONAL COOKIE DAY!


I must admit, I have a sweet tooth that is usually only satisfied by chocolate. A few days ago I was craving chocolate chip cookies and while gathering the typical ingredients I saw a recipe printed on the bag of flour. I put the recipe to the test and I was pleasantly surprised. The cookies were moist, soft and chewy (my mouth is salivating as I write this post because those cookies were delicious. Wish I still had some).

Ingredients Needed:

  • 1 1/4 Cups of packed brown sugar
  • 2 sticks of butter, softened
  • 1 teaspoon of vanilla
  • 1 egg
  • 2 cups of oats
  • 1 1/2 cups of unbleached flour
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 cup of semi-sweet mini chocolate chips

Optional ingredients: shaved coconut, flax seeds

I actually divided the cookie dough in two parts and added the optional ingredients to one part, they turned really good too.


  1. Heat oven to 350 degrees.
  2. In a large bowl, mix the brown sugar, softened butter, vanilla and egg.
  3. Add oats, flour, baking soda, and salt.
  4. Once all those ingredients are mixed well, add chocolate chips.
  5. On a parchment paper lined cookie sheet, rounded tablespoonfuls about 2 inches apart.
  6. Bake for 9 to 12 minutes or until golden brown. Cool slightly and remove from cookie sheet to cooling rack.


The final step is to enjoy these delicious cookies. I love serving warm cookies with a scoop of ice cream, yum.
